Angel Hair Pasta with Leeks and Cream

10 oz. Leeks
1/4 cup unsalted butter
4 eggs
1 cup freshly grated parmesan cheese
1/4 cup light cream
Salt and freshly ground pepper
1 lb dried angel hair pasta

Trim the leeks, discarding the root ends and the tough green tops. Slit leeks lengthwise three fourths fo the way down to the root ends. Wash, cut into crosswise thin pieces.

In large frying pan over medium heat, melt butter.  Add the leeks and saute stirring until tender, about 5 minutes.  Remove from heat, cover and keep warm.

In a bowl, beat together the eggs, parmesan cheese, the cream and salt and pepper to taste, set aside.

Cook pasta to almost al dente.  Drain pasta, add it to the leeks in frying pan and raise heat to high.  Pour in the egg mixture and stir vigorously until the eggs are firm but not dry, (1-2 minutes).

Transfer to a warmed serving dish and serve immediately. Serve with additional Parmesan cheese.

Vegetable Dip

1/2 pt sour cream
1 cup mayonnaise
1 Tbs dried onion
1 Tbs dried parsley
1 tsp. dill weed
1 tsp. Beau Monde

Combine all ingredients mixing well. Refrigerate overnight.

Grandma Patty's Cheddar Chowder

2 cups water
2 cups diced potatoes
1/2 cup diced carrots
1/2 cup diced celery
1/4 cup chopped onion
1 tsp salt
1/4 tsp pepper

White Sauce:
1/3 cup butter
1/2 cup flour
2 cups milk
2 cups cheddar cheese, grated

Combine soup ingredients in large kettle. Boil 10-12 minutes. Meanwhile in a small saucepan, make white sauce by melting the butter.  Add flour and stir until smooth (about 1 minute). Slowly add milk, cook until thickened.  Add grated cheese to white sauce; stir until melted. Add white sauce to vegetables that have not been drained. heat through.

Parmesan Squash Bake

2 medium zucchini
2 medium buttern/summer squash
1 medium sweet yellow onion, diced
1/2-1 cup grated parmesan
1/4 cup extra virgin olive oil, divided
2 cloves garlic, minced
sea salt to taste

In a small pan, heat about 1 T of oilve oil. Fry the diced onion until it's soft, about 7 minutes. Add in the garlic and fry for another minute or so. Pour the onion mixture into the bottom of a 9x9 baking dish
Slice the zucchini and squash into thin slices. Layer them into 4 rows across in the dish, over the onions. Slowly pour the olive oil over the peices until they are evenly coated. Sprinkle with sea salt.
Bake in a preheated 350 degree oven for 30 minutes, uncovered. Pour the parmesan over the top of the dish. Bake for antoher 15-20 minutes, or until the vegies are soft and slightly golden brown.

Grilled Corn

Olive oil
Garlic Salt
Onion Flakes
Salt
Pepper

Cover corn cob with mixture. Wrap in tin foil and grill for about 20 minutes on low
