Cheeseburger Pie

1 lb. ground beef
½ cup chopped onion
1 can (8 oz.) tomato sauce
1 can (4 oz.) chopped mushrooms, drained
¼ cup chopped parsley
¼ tsp. salt
1/4/ tsp. dried oregano, crushed
1/8 tsp. pepper
2 pkgs. (8 rolls each) crescent rolls
3 eggs
6 slices American cheese
1 Tbsp. water


Brown the ground beef and onion until onion is transparent, drain off fat.  Stir in tomato sauce, mushrooms, parsley, salt, oregano and pepper; set aside.  Unroll 1 package of rolls and separate dough of one package and place in bottom of 13x9x2 baking dish, press together and up sides to form a crust.  Separate eggs beat together the whites from 3 eggs plus yolk from 2 eggs; pour half of beaten egg mixture over pie shell.  Spoon the meat mixture into shell.  Arrange cheese slices on top.  Spread remaining egg over cheese.  Mix reserve egg with water set aside.  Unroll second package place on top and press together at edges to seal, brush top with reserved egg.  Bake 350 degrees for 20 minutes, cover loosely for remaining 20 minutes let stand for 10 minutes.

Goulash

1 lb. ground beef
½ medium onion
1 can whole tomatoes
1 can kernel corn
½ pkg. salad macaroni
1 large can tomato juice

Brown ground beef in skillet. Add remaining ingredients pouring tomato juice into skillet until macaroni is covered. Continue adding juice as needed until macaroni is tender.

Sloppy Joes (Barbecues)

1 lb. hamburger
1 chopped onion
1/2 c. ketchup
1/8 tsp. pepper
1 Tbsp. Worcestershire Sauce
1 Tbsp. prepared mustard
1 Tbsp. vinegar
1/3 cup brown sugar
1 can tomato soup

Brown hamburger, add onion and cook till it starts to soften, add remaining ingredients, then simmer for 10 minutes.

Taco Casserole (food storage)

1 can hamburger (2 lbs fresh hamburger)
1 15oz can red beans (or kidney, black, etc.)
1 15oz can corn
1 8oz can tomato sauce
1 Tbsp dried red/green bell peppers
1 cup dried potato pearls (regular dried or fresh work as well)

Taco Seasoning:
1 tsp Powdered onion
1 tsp Paprika
1 tsp crushed dried red pepper
1 tsp sweet basil
1/2 Tbsp cornstarch
1 Tbsp. Chilli powder
1/2 tsp salt
1 tsp ground cumin
1/2 tsp garlic powder

1. Heat can of hamburger (including liquid) and dried bell peppers-simmer till peppers are rehydrated and some of the liquid is evaporated. (abt. 5 minutes-drain off some of the liquid if heating is a problem)
2.  Add beans, corn
3. Add tomato sauce
4. Mix taco seasoning and add to above, stir well and heat through
5. Place in a casserole pan
6. Reconstitute potatoes- add 2 cups hot water to 1 cup potato pearls, stir with fork
7. Cover meat mixture with reconstituted potatoes
8. Sprinkle with cheese if desired
9. Heat in oven to desired temperature at 350 degrees.

Meatloaf

1.5 lb ground beef
¾ cup oatmeal
¼ cup chopped onion
¼ tsp. pepper
1 can tomato soup
1 egg
½ tsp salt

Mix in a mixing bowl, place in greased bread pan. Bake for 1 hr at 350ยบ

Mama's Crock Pot Chili

This recipe actually calls for beer, but since we don't drink alcohol I leave it out. You could also leave out the honey as well, but I think it gives it a nice sweet and spicy type of a flavor. Great when you need to take a meal to someone since it makes quite a bit.

2 tbsp. olive oil
1 large onion
4 cloves garlic, crushed
1 ½ to 2 lbs ground turkey (ground beef)
1 can crushed tomatoes
3 tbsp. chilli powder
1 tsp. curry
3 tbsp. hot sauce
½ cup honey
1 pkg frozen corn(canned)
1 can(15 oz) kidney or pink beans (black beans)
½ cup diced mild green chillies (canned green chillies)
3 beef bouillon cubes
1 to 2 Tbsp. flour to thicken(+)
1 can tomato soup with 1 can water
1 can chicken broth
3 ribs celery
2 green onions
1 green pepper

Heat oil in large skillet over medium-low heat until hot. Add onion. Cook and stir 5 minute. Add garlic; cook and stir 2 minutes. Add turkey or beef to skillet. Cook and stir until no longer pink. Drain fat and discard. Put in crock pot and add remaining ingredients, stirring until mixed. Cover and cook on low 8-10 hours or high 4-6 hours. Good with corn bread.
