Clam Chowder



1 cup onions finely chopped

1 cup finely chopped celery

5 cup very finely chopped potatoes

2 cans minced clams and juice

¾ cup butter

¾ cup flour

1 qt half and half cream and milk

1 ½ tsp salt

Pepper

2 Tbs. (1 ½ taste) red wine vinegar

 

Drain juice from clams and pour over vegetables in small sauce pan.  Add enough water to cover and cook until tender.

Melt butter and flour

Make white sauce add vinegar and juice on veg. Dump clams and veggies and add vinegar.
